Full recipe:

  • 2 tsp avocado or coconut oil
  • 1 chopped onion
  • 1 cup diced bell pepper
  • 1 medium zucchini, halved
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1 ½ cups coconut curry simmer sauce
  • ½ cup vegetable broth
  • 4 cups baby spinach
  • 2 cups precooked brown rice

Instructions:

  1. Heat oil in a large skillet over medium-high heat. Add onion, bell pepper, and zucchini. Cook, stirring often, until the vegetables begin to brown, about 5-6 minutes.
  2. Add the chickpeas, coconut curry simmer sauce, and vegetable broth. Stir well and bring to a simmer.
  3. Reduce the heat to medium-low and cook for an additional 4-6 minutes until the vegetables are tender.
  4. Just before serving, stir in the spinach and allow it to wilt.
  5. Serve over a bed of precooked brown rice.
