Full recipe:
- 2 tsp avocado or coconut oil
- 1 chopped onion
- 1 cup diced bell pepper
- 1 medium zucchini, halved
- 1 (15-ounce) can chickpeas, drained and rinsed
- 1 ½ cups coconut curry simmer sauce
- ½ cup vegetable broth
- 4 cups baby spinach
- 2 cups precooked brown rice
Instructions:
- Heat oil in a large skillet over medium-high heat. Add onion, bell pepper, and zucchini. Cook, stirring often, until the vegetables begin to brown, about 5-6 minutes.
- Add the chickpeas, coconut curry simmer sauce, and vegetable broth. Stir well and bring to a simmer.
- Reduce the heat to medium-low and cook for an additional 4-6 minutes until the vegetables are tender.
- Just before serving, stir in the spinach and allow it to wilt.
- Serve over a bed of precooked brown rice.
