Here’s the full recipe to try:

Ingredients:

  • 4 portobello mushroom caps
  • 1 ripe tomato, sliced
  • 1 onion, sliced & grilled
  • 2 tbsp olive oil
  • 6 oz mozzarella cheese
  • 1 tbsp balsamic vinegar
  • 4 brioche buns
  • 1 head of fresh lettuce

Instructions:

  1. Preheat the broiler.
  2. Place the mushroom caps on a baking sheet, rounded side down. Drizzle with olive oil, balsamic vinegar, and season with salt and pepper.
  3. Broil the mushrooms about 6 inches from the heat for 7 minutes.
  4. Add a slice of mozzarella to each mushroom cap and continue broiling until the cheese is melted, about 2 minutes.
  5. While the mushrooms broil, lightly toast the brioche buns under the broiler.
  6. Once the mushrooms are ready, assemble the burgers by placing a slice of tomato on each bottom bun. Add the cheesy mushroom cap, grilled onion slices, and top with fresh lettuce. Finish with the top bun.
