Ingredients:
- 4 portobello mushroom caps
- 1 ripe tomato, sliced
- 1 onion, sliced & grilled
- 2 tbsp olive oil
- 6 oz mozzarella cheese
- 1 tbsp balsamic vinegar
- 4 brioche buns
- 1 head of fresh lettuce
Instructions:
- Preheat the broiler.
- Place the mushroom caps on a baking sheet, rounded side down. Drizzle with olive oil, balsamic vinegar, and season with salt and pepper.
- Broil the mushrooms about 6 inches from the heat for 7 minutes.
- Add a slice of mozzarella to each mushroom cap and continue broiling until the cheese is melted, about 2 minutes.
- While the mushrooms broil, lightly toast the brioche buns under the broiler.
- Once the mushrooms are ready, assemble the burgers by placing a slice of tomato on each bottom bun. Add the cheesy mushroom cap, grilled onion slices, and top with fresh lettuce. Finish with the top bun.
