  • 8 ounces pasta shells
  • 2 cloves garlic, minced
  • 1 cup pumpkin puree
  • 2 tbsp tomato paste
  • 2 tbsp coconut milk
  • 1 cup vegetable broth
  • 2 cups baby spinach
  • ¼ cup toasted walnuts
  • Grated parmesan cheese (optional)
  • Olive oil, salt, and pepper to taste

Instructions:

  1. Cook the pasta according to the package instructions. Drain and keep warm.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the minced garlic and cook until fragrant, about 1-2 minutes.
  3. Whisk in the tomato paste, pumpkin puree, and coconut milk until smooth. Stir in the vegetable broth, nutmeg, salt, and pepper. Let the sauce simmer on low for about 5 minutes, stirring occasionally.
  4. Add the spinach and cook until it wilts.
