- 8 ounces pasta shells
- 2 cloves garlic, minced
- 1 cup pumpkin puree
- 2 tbsp tomato paste
- 2 tbsp coconut milk
- 1 cup vegetable broth
- 2 cups baby spinach
- ¼ cup toasted walnuts
- Grated parmesan cheese (optional)
- Olive oil, salt, and pepper to taste
Instructions:
- Cook the pasta according to the package instructions. Drain and keep warm.
