Ingredients:

  • 3 medium sweet potatoes
  • 1 tbsp sesame oil (divided)
  • 1 lb organic chicken breast, cut into bite-sized pieces
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • ¼ cup chopped peanuts (for garnish)
  • Fresh cilantro, chopped (for garnish)
  • Mild Thai peanut sauce (store-bought or homemade)

Instructions:

  1. Prepare the Sweet Potatoes: Cut the ends off the sweet potatoes. Use a julienne peeler or spiralizer to create noodle-like strips. Set aside.
  2. Cook the Chicken: Season the chicken breast pieces with salt and pepper. Heat ½ tbsp of sesame oil in a large skillet over medium heat. Add the chicken and cook for 4-6 minutes until golden brown and cooked through. Once done, remove from the skillet and set aside in a bowl.
  3. Stir-fry the Vegetables: In the same skillet, add the remaining ½ tbsp of sesame oil. Toss in the broccoli florets and red bell pepper slices. Stir-fry for about 5 minutes until tender.
  4. Combine and Cook the Noodles: Add the sweet potato noodles to the skillet and stir for 1-2 minutes until they begin to soften.
  5. Bring It All Together: Add the cooked chicken back into the skillet, along with the Thai peanut sauce. Stir everything together, reducing the heat to low. Continue cooking for an additional 2-3 minutes, or until the sweet potato noodles are tender but still slightly firm (al dente).
  6. Garnish & Serve: Remove from heat and garnish with chopped peanuts and fresh cilantro. Serve immediately and enjoy this nutrient-packed, flavorful meal!
